Crock Pot Teriyaki Chicken

In a matter of minutes, you can throw together ingredients to cook while you’re at work and have the perfect meal ready and waiting when you arrive home.

In this recipe, you’ll get a delicious, sweet and savory teriyaki flavored chicken that is easy to mix and match with a variety of vegetables, top over rice, or throw into a wrap.

Ingredients
6 Boneless Chicken Breast
1 cup Sugar or 1/2 cup Truvia 
2 tablespoons Water
1/2 teaspoon ground ginger
1/4 teaspoon of black pepper
1 Garlic Clove (minced)
2 tablespoons Extra Virgin Olive Oil
Brown Rice **optional
Sesame Seeds **optional
Pineapple **optional

 


INSTRUCTIONS

 
Make the teriyaki sauce: In a medium bowl mix together the sugar, soy sauce, vinegar, garlic, ginger, and pepper.

Cook the chicken: Place chicken in the bottom of the Crock Pot.  Pour sauce over the chicken and cover with the lid. Cook on low for 8 hours

Prepare the chicken: Take the chicken out of the Crock Pot and set aside. Mix the EVOO and water together in a small bowl, then pour into the Crock-Pot to combine with teriyaki sauce. Turn the Crock Pot on high for about 30 minutes to let the sauce thicken. While the sauce is thickening, use scissors or two forks to shred the chicken. Place the chicken back into the Crock Pot with the sauce to let it heat through for the remaining 10 minutes.

Cook the rice: In the meantime, place a pot of water on the stove to boil. Pour a cup of brown rice into the boiling water, turn to medium heat, and cover to cook.

Serve: Serve teriyaki chicken over brown rice. Sprinkle with sesame seeds and pineapple and enjoy!


TIP: Grab a whole wheat low-carb wrap, add spinach, feta, avocado, and your leftover shredded teriyaki chicken to make a quick and easy wrap for lunch!
